Just in time for Valentine’s Day, Vancouver Island University (VIU) student Grace Poirier has just returned from her European school field trip where she got the lucky chance to create her own chocolate.
This is the second year a VIU Bakery and Pastry Arts student has won the chance to attend the Cacao Barry’s Or Noir Lab to design the university’s next signature chocolate to be sold on campus.
Poirier won this prize after a blind taste she and her classmate had to guess certain flavours in food and beverage items that would be found in chocolate.
She speaks to CHLY about her experience making chocolate and why chocolate is a great gift to give the person you love on Valentine’s Day.
