Local tree farm and maple syrup producer sees earliest tree tapping ever this year
Maple syrup season typically begins in late February, and those in the industry have proclaimed March as the “sweet spot.”
This year, 2024, is no regular year though. Derek Elliott, a tree farmer at Elliott Tree Farm in Hillsburgh, says this year’s date of starting to tap trees was the earliest he’s ever seen.
Elliott says the perfect temperatures for making maple syrup are below zero at night and above zero during the day.
That benchmark has been hit in recent weeks, and CICW caught up with Elliott to learn more about the record-breaking year.
